Truffle Mushroom Grilled Cheese

Grilled cheese, a staple from all of our childhoods. The classic American cheese sandwiched in between white bread. To me, grilled cheese is beautiful in its simplicity, but definitely can be elevated. And that is where this truffle mushroom grilled cheese comes in. With a parmesan crusted exterior, a cheesy melty interior, and umami richness coming from mushroom and truffle salt, this is the perfect meal to make when you want something just a little more.

Truffle Mushroom Grilled Cheese
An elevated grilled cheese that is melty and bursting with savory flavor!
Ingredients
- 2 slices rustic bread Italian batard, if possible
- 1 tbsp butter softened
- 1/2 cup unexpected cheddar (Trader Joe’s) or parmesan
- 2 slices Muenster cheddar
- 1/4 cup Mexican cheese blend
- 1/3 cup mushrooms
- truffle salt
Instructions
- Butter one side on each slice of bread.
- Grate unexpected cheddar (or Parmesan) on a plate and lay the butter side of bread on it, then sprinkle on truffle salt.
- Heat a pan over medium heat and lay butter side of bread down on it.
- Meanwhile, sauté mushrooms in a separate pan. Add some more truffle salt.
- Add muenster cheese + Mexican cheese on the bread when on the pan.
- Once both sides are golden brown on the bottom, add mushrooms and put one slice of bread on top of the other.
- Use a dome lid over the sandwich if cheese isn’t melted fully. Cut in half & enjoy.
