Juicy Apricot Burrata Crostini

These juicy apricot burrata crostini are the perfect appetizer for any get-together and will for sure be a crowd pleaser. They are particularly delicious in the summer months when the apricots are in season.

Ingredients
  

  • 1 lb apricots
  • 1 baguette sliced
  • 2-3 burrata balls
  • 2 tbsp olive oil
  • flakey salt for garnish
  • chopped basil for garnish

Instructions
 

  • Slice baguette into 1-inch thick pieces and brush olive oil on them.
  • Toast baguette slices on both sides on a cast iron pan.
  • Cut each apricot in half and sear until golden brown and crisp.
  • Lay down ~1 tbsp burrata on each slice, top with apricot, basil, and flakey salt.
