Fig & Chocolate Chip Almond Butter Bars

Ooey. Gooey. Fig and chocolate chip almond butter bars. Imagine a cross between a fig newton bar and a chocolate chip bar, truly heaven. You can eat them for breakfast, dessert, or even as a snack with some greek yogurt on the side.

Imagine a cross between a fig newton bar and chocolate chip bar. That’s what these bars are, and they are perfect for either breakfast or a mid-afternoon dessert.
Ingredients
Base & Top Layer
- 1 cup oats
- 3/4 cup whole wheat flour
- 1 tsp baking powder
- 3/4 tsp cinnamon
- 1/2 tsp sea salt
- 1 tsp vanilla extract
- 1/4 cup brown sugar
- 1/4 cup oat milk
- 2 eggs
- 1/2 cup almond butter
- 1/2 cup chocolate chips
- sliced figs on top
Fig Jam Filling
- 8-9 figs
- 1 tsp lemon juice
- 2 tbsp brown sugar
Instructions
- Add figs, lemon juice, and brown sugar to a small saucepan and bring them to a boil. Then simmer until thickened. Cool slightly.
- Preheat oven to 350℉ and grease an 8×8 dish then add parchment paper.
- Add the wet ingredients + sugar to a medium mixing bowl and whisk well.
- To another medium bowl, mix dry ingredients together.
- Add the wet ingredients to the dry then mix well. Fold in chocolate chips.
- To assemble, add half of the oat mixture to the bottom of the dish. Next, add the fig jam on top and spread it evenly over the first layer.
- Then, add the other half of the oat mixture and finally layer with sliced figs for presentation.
- Bake for 25 minutes or until fork comes out clean.
- Cool completely, then cut into 9 squares.
