Ooey. Gooey. Fig and chocolate chip almond butter bars. Imagine a cross between a fig newton bar and a chocolate chip bar, truly heaven. You can eat them for breakfast, dessert, or even as a snack with some greek yogurt on the side.

Imagine a cross between a fig newton bar and chocolate chip bar. That’s what these bars are, and they are perfect for either breakfast or a mid-afternoon dessert.

Ingredients
  

Base & Top Layer

  • 1 cup oats
  • 3/4 cup whole wheat flour
  • 1 tsp baking powder
  • 3/4 tsp cinnamon
  • 1/2 tsp sea salt
  • 1 tsp vanilla extract
  • 1/4 cup brown sugar
  • 1/4 cup oat milk
  • 2 eggs
  • 1/2 cup almond butter
  • 1/2 cup chocolate chips
  • sliced figs on top

Fig Jam Filling

  • 8-9 figs
  • 1 tsp lemon juice
  • 2 tbsp brown sugar

Instructions
 

  • Add figs, lemon juice, and brown sugar to a small saucepan and bring them to a boil. Then simmer until thickened. Cool slightly.
  • Preheat oven to 350℉ and grease an 8×8 dish then add parchment paper.
  • Add the wet ingredients + sugar to a medium mixing bowl and whisk well.
  • To another medium bowl, mix dry ingredients together.
  • Add the wet ingredients to the dry then mix well. Fold in chocolate chips.
  • To assemble, add half of the oat mixture to the bottom of the dish. Next, add the fig jam on top and spread it evenly over the first layer.
  • Then, add the other half of the oat mixture and finally layer with sliced figs for presentation.
  • Bake for 25 minutes or until fork comes out clean.
  • Cool completely, then cut into 9 squares.
