Fig & Chocolate Chip Almond Butter Bars
Imagine a cross between a fig newton bar and chocolate chip bar. That's what these bars are, and they are perfect for either breakfast or a mid-afternoon dessert.

Base & Top Layer
- 1 cup oats
- 3/4 cup whole wheat flour
- 1 tsp baking powder
- 3/4 tsp cinnamon
- 1/2 tsp sea salt
- 1 tsp vanilla extract
- 1/4 cup brown sugar
- 1/4 cup oat milk
- 2 eggs
- 1/2 cup almond butter
- 1/2 cup chocolate chips
- sliced figs on top
Fig Jam Filling
- 8-9 figs
- 1 tsp lemon juice
- 2 tbsp brown sugar
Add figs, lemon juice, and brown sugar to a small saucepan and bring them to a boil. Then simmer until thickened. Cool slightly.
Preheat oven to 350℉ and grease an 8x8 dish then add parchment paper.
Add the wet ingredients + sugar to a medium mixing bowl and whisk well.
To another medium bowl, mix dry ingredients together.
Add the wet ingredients to the dry then mix well. Fold in chocolate chips.
To assemble, add half of the oat mixture to the bottom of the dish. Next, add the fig jam on top and spread it evenly over the first layer.
Then, add the other half of the oat mixture and finally layer with sliced figs for presentation.
Bake for 25 minutes or until fork comes out clean.
Cool completely, then cut into 9 squares.
