Zesty Coconut Lime Pancakes

Whether you’re on a tropical vacation or just sitting at home on the weekend, these coconut lime pancakes are sure to bring you to paradise! Soft, fluffy, and with the tang of lime, they are delicious and can transport you to wherever you want to be. In my opinion, there are some essentials of a good pancake and I’m going to share those tips with you all:
- ALWAYS sift your flour when making pancakes. This will ensure lump-free batter that yields fluffy pancakes.
- Add melted butter to the batter as this will taste more like pancakes at your favorite brunch place. Buttery and delicious.
- Whisk instead of fold your dry and wet ingredients together, to make sure the batter is smooth and can be poured out easily.
- Pinch of salt, always.
Now that we have gone over the tips to make the best pancake, we must add those yummy ingredients in these, namely lime zest, a little bit of lime juice, and coconut flavored yogurt (you could alternatively use coconut whipped cream or just add coconut shreds on top!)

Zesty Coconut Lime Pancakes

Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp kosher salt
- 2 tbsp sugar
- 2 eggs
- 1/2 to 2 cups milk dairy-free or regular milk will work well!
- 2 tbsp melted, cooled butter
- 3 tbsp unsweetened coconut shreds
- 2 tsp lime juice
- zest of one lime
- coconut flavored yogurt, or coconut whipped cream for topping
- neutral oil for greasing pan
Instructions
- Mix all of the dry ingredients together in a medium bowl, making sure to sift the flour to remove any clumps.
- Mix all of the wet ingredients together in a large bowl, minus the melted butter.
- Slowly and surely pour the butter into the wet ingredients, mixing while pouring. Keep a towel under the bowl so your hand is steady.
- Add the dry ingredients into the wet ones and whisk until smooth. It is okay if there is a few clumps.
- Heat a skillet over low-medium heat and add oil to pan, spreading evenly.
- Scoop about 1/4 cup batter for each pancake and turn over when bubbles start to form. Cook until golden brown on each sides.
- Serve and top with desired coconut yogurt or whipped cream and some lime zest for garnish!
